- 2 limes

- 1 cup cashews
- 2 tbsp olive oil
- 3 garlic cloves
- 2 lemons
- ¼ tsp sea salt
- ½ to 1 cup water
Directions
- Preheat oven to 190°C (375°F). Peel and slice potatoes into ¼–½ inch rounds. Toss with coconut oil and ¼ tsp sea salt.
- Arrange on parchment-lined tray without overlapping. Bake 20 minutes, flip, then bake another 10 minutes until golden.
- Mix avocado, tomato, onion, cilantro, jalapeño, and lime juice in a bowl.
- Blend aioli ingredients until smooth. Add more water for thinner consistency.
- Pile baked potato slices on a plate. Top with avocado salsa and drizzle with aioli if desired. Sprinkle remaining sea salt.
